This recipe offers everything Recipe N° 811 brings, but with the very silky texture of butter oil for a smooth mouthfeel. This unique mixture delays the appearance of fat bloom, and its well-balanced, smooth and roasted cocoa notes make for a very pleasant taste experience.
Pair it with a wide variety of ingredients like fruits, spices and even liqueurs.

Amaze with the most iconic white chocolate.
Recipe N° W2 is another one of Octaaf Callebaut’s original recipes that has grown into many chefs’ preferred chocolate. This chocolate is as Belgian as can be, since it’s predominately made with milk from cows grazing on Belgian pastures and sugar from locally grown sugar beets.
It has a delightful taste with pronounced milky, creamy, caramelly and vanilla notes that are in perfect balance. W2 can be paired with a wide range of ingredients and flavours: from sour to bitter, spices to herbs and from fruits to beers.
With its medium fluidity, this is a great all-round chocolate. Used in chocolate bars or hollow figures, it takes you by surprise with its lovely satin gloss and snappy texture. And fully rely on it to flavour mousses, crèmes, ice creams, drinks and sauces.

sweetened cream alternative
Mactop® Traditional is a delicious alternative to fresh cream that is ideal for patisserie, confectionery, gateaux and desserts. It contains less than half the fat of double cream and when whipped, it’s freeze thaw stable and triples in volume, giving you a great yield every time. The thick, creamy consistency of the whip holds exceptionally well and stays deliciously fresh for up to four days in the fridge.

The original French biscuit crunch.
This crumbly mixture of crushed original French ‘gauffres dentelles’ is ready to add a light crisp to your pralinés and giandujas. You can also mix it with tempered chocolate to add a crunchy interior to bonbons, pastries and desserts. Pailleté Feuilletine will remain crunchy.
You can sprinkle it on top of mousses, ice creams and desserts that are served à la minute as well. Our chefs recommend not to mix it into cream, dairy or liquid bases, since Pailleté Feuilletine tends to absorb the moisture, and will turn soft and soggy.
Tiny bits of light and caramelly biscuit crunch.
Mix into chocolate, nut praline or giandujas to add a crispy bite.
Remains crispy in combination with chocolate or nut pastes.
