Mactop® Traditional is a delicious alternative to fresh cream that is ideal for patisserie, confectionery, gateaux and desserts. It contains less than half the fat of double cream and when whipped, it’s freeze thaw stable and triples in volume, giving you a great yield every time. The thick, creamy consistency of the whip holds exceptionally well and stays deliciously fresh for up to four days in the fridge.

- Pipe, pour and whip:
- Smooth, glossy and close texture when whipped.
- Great pouring/coating consistency as a covering for desserts.
- A suitable alternative to whipped cream on a soya hot chocolate.
Whips to 3 times its volume and freeze-thaw stable when whipped (for freeze-thaw stability add 10% whipped weight of caster sugar). No need to worry if you leave the whisk on by mistake – after 30 mins we saw no change in the product. When whipped has a 3-day refrigerated shelf life.

- Mix on slow speed for 1 minute, scrape down well.
- Mix on middle speed for 6 minutes and fold in any inclusions if desired.
- Deposit batter into 3 circular cake trays and bake at 185-195°C for 30 minutes.
- Allow cake to cool. Blend 10% Macphie Luxury Salted Caramel Filling with Macphie Rainbow Vanilla Frosting and layer with cake. Use to cover the outside of the cake.
- Drizzle more Macphie Luxury Salted Caramel Filling over the top and finish with spun sugar.

Pleasantly smooth, heavenly hazelnut flavour.
Count on Creme dell’Artigiano Nocciola to add a smooth filling with a lovely hazelnut taste and a velvety mouthfeel to your rolls, croissants and pastries.
This baking paste easily resists oven temperatures up to 200°C and is just perfect for filling and baking Danish pastries, tartlets, rolls, buns and so much more. After baking, Creme dell’Artigiano Nocciola remains smooth and soft without hardening or drying out.
Applying is easy: first soften or slightly heat the crème before piping.
Creme dell’Artigiano can be used for glazing pastries and entremets as well. After heating up to 40°C and applying to pastries, it sets rather quickly, but keeps its soft, smooth texture and great mouthfeel.
Creme dell’Artigiano Nocciola owes its great taste and texture to its unique composition based on hazelnuts and non-hydro vegetable fats.

Recipe N° W2 is another one of Octaaf Callebaut’s original recipes that has grown into many chefs’ preferred chocolate. This chocolate is as Belgian as can be, since it’s predominately made with milk from cows grazing on Belgian pastures and sugar from locally grown sugar beets.
It has a delightful taste with pronounced milky, creamy, caramelly and vanilla notes that are in perfect balance. W2 can be paired with a wide range of ingredients and flavours: from sour to bitter, spices to herbs and from fruits to beers.

With its lovely white chocolaty taste and soft, creamy texture, this crème is great for filling choux pastries, Italian crust pastries, tartlets and so much more. It’s also perfect for glazing cakes and pastries with a satin, white coating that remains soft and has a pleasant mouthfeel. Used as glazing, it keeps its perfect looks on your pastries during their shelf life and doesn’t run off.
